Tangy Mustard

1/2 cup Extra Virgin olive oil
3 T Dijon mustard
2 T lemon juice
2 T shallot, finely minced
2 garlic cloves, finely minced
2 tsp fresh dill, chopped
1 T capers, rinsed and chopped


Mix all ingredients in a glass bowl or dish with sides. Marinate 4 salmon or 4 swordfish steaks for up to 2 hours.

Makes 1 cup
