Egg and Grated Potato Gratin

3 cl olive oil
2 shallots, peeled and chopped
1 garlic clove, peeled and crushed
1 pinch of salt
150 gr double cream
100 gr grated Gruyère cheese (or Comté
4 medium potatoes, peeled
25 gr butter with the oil in a pan, add shallots
and garlic, fry gently.
to a bowl, add the eggs and beat them.
the oven at thermostat 7 (210°C / 410°F).
in the cream, Gruyère cheese (or again,
Comté cheese is much better).
the potatoes, squeeze them to extract as much
moisture as possible, then dry with paper.
in the egg mixture. Put 25 gr butter in the
dish (should be ovenproof) and heat in a preheated
oven until melted and very hot.

the oven for 30 minutes.
