Fried Oysters Wrapped in Bacon

This recipe comes from Karen ( Ilyce is her alias ) who is in a recipe club with between twenty and thirty members, the oldest of whom is eighty-six and the youngest is thirteen, who collect recipes and love to cook.

Karen told me that she is "thirty-four years old, single and loves to cook, among other things. I've been cooking and collecting recipes since I was in my teens and have a very big collection. I collect from magazines, friends, newspapers, brochures, advertising material, and product recipes, the net, recipe groups and a list of other places. If I've taken the recipes from the web or from a magazines, there should be a source but sometimes, over the years, it wasn't collected".


12 fresh, shucked oysters (in a jar)
1/4 c Oyster liquor (from jar)
1 Bay leaf
1 ts Worcestershire sauce
2 c Oil (for frying)
4 slices (1/2 oz each) lean,
1/2 c unbleached white flour (in a bowl)
2 Eggs (beaten in a small bowl)
1 c Bread crumbs
12 Toothpicks (for wrapping raw bacon Bacon)

  • In a 1 quart saucepan, on a medium flame, poach oysters in oyster liquor with bay leaf and Worcestershire (about 2 minutes, until the edges of the oysters curl).
  • Remove oysters from liquor and set aside. Discard liquor.
  • Cut bacon strips in thirds. Wrap each oyster with bacon and fasten with a toothpick. Roll in flour, dip in eggs, and then roll in bread crumbs.
  • Heat oil in a 9 inch skillet. When oil smokes, reduce heat and fry oysters for 5 minutes. Drain on paper bag and serve immediately.
