Recipe for :

Masala Stuffed Potatoes

This is one of the recipes that has been provided by Vandana who is very much a keen cook of Indian dishes. Hopefully there will be more to come!

I asked Vandana for a little background information:

"I live in Pune, India. I am a South Indian so many of my recipes are from that area. I enjoy cooking and my family and friends do say that it is appetizing! By profession I am a Relocation Consultant and the India head of an International Charity. I hope that covers the introduction".


250 gm potatoes peeled
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp Garam masala
1 tsp lime juice
2 big tomatoes blanched and chopped
1 big onion minced
1 inch ginger minced
4 green chilies minced
2 tbsp coriander leaves chopped
salt and chili powder to taste
2 tbsp ghee

  • Mix together cumin, garam masala, chili powder, turmeric, half of the salt and the lime juice.
  • Wash and cut potatoes into four halfway through, then stuff the mixed ground spices into the potatoes.
  • Heat 2 tbsp ghee and fry ginger and onion till soft.
  • Add the tomatoes, chilies, coriander leaves and salt and cook till the ghee separates.
  • Place the potatoes on the top, sprinkle hot water on them and cover and cook till potatoes are soft.
