1 c. all pur flour
c1/2 chilled unsalted butter, 1 stick, diced
4 oz pkg cream cheese at room temp
5 large eggs and 2 large egg yolks
c1/3 whipping cream
c1/4 all pur flour
outside of 9 inch diameter springform pan with
with 2 3/4 inches of foil in 3 layers.
flour, sugar and salt in processor.
butter and cut in, using on / off turns until
mixture begins to clump together.
crust onto bottom, not sides, of prepared pan.
until golden, about 25 minutes.
electric mixer beat cream cheese and sugar in
large bowl until smooth.
in 5 whole eggs, then 2 yolks.
whipping cream; beat until smooth.
filling into baked curst.
cheesecake in large roasting pan. Add enough
water to roasting pan to come halfway up sides
of springform pan.
until cheesecake is set around edges, and centre
moves alightly when gently shaken, about 2 hours
from water. Chill
overnight or up to two days. Serve cold.
