Classic Cheesecake

1 c. all pur flour
c1/4 sugar
ts1/8 salt
c1/2 chilled unsalted butter, 1 stick, diced

4 oz pkg cream cheese at room temp
c1-3/4 sugar
5 large eggs and 2 large egg yolks
c1/3 whipping cream
c1/4 all pur flour



  • Preheat oven to 375ºF.
  • Wrap outside of 9 inch diameter springform pan with with 2 3/4 inches of foil in 3 layers.
  • Blend flour, sugar and salt in processor.
  • Add butter and cut in, using on / off turns until mixture begins to clump together.
  • Press crust onto bottom, not sides, of prepared pan.
  • Bake until golden, about 25 minutes.
  • Reduce heat to 350ºF.


  • With electric mixer beat cream cheese and sugar in large bowl until smooth.
  • Beat in 5 whole eggs, then 2 yolks.
  • Add whipping cream; beat until smooth.
  • Beat in flour.
  • Pour filling into baked curst.
  • Place cheesecake in large roasting pan. Add enough water to roasting pan to come halfway up sides of springform pan.
  • Bake until cheesecake is set around edges, and centre moves alightly when gently shaken, about 2 hours 35 minutes.
  • Remove from water. Chill overnight or up to two days. Serve cold.
