Recipe for :

Seekh Kebabs

This is one of the recipes that has been provided by Vandana who is very much a keen cook of Indian dishes. Hopefully there will be more to come!

I asked Vandana for a little background information:

"I live in Pune, India. I am a South Indian so many of my recipes are from that area. I enjoy cooking and my family and friends do say that it is appetizing! By profession I am a Relocation Consultant and the India head of an International Charity. I hope that covers the introduction".


250 gm minced meat
1 tsp chili powder
1/4 tsp tenderizer
1/2 tsp garam masala
1/2 tsp cumin powder
1/4 tsp nutmeg
1 egg yolk
1 tsp dried fenugreek leaves
2 tsp corn flour
1 tsp poppy seeds
2 tsp powdered cashewnuts
1/2 tsp red color
1 tsp ginger paste
1/2 tsp garlic paste
1 tbsp each ground onion, green chilies and coriander leaves
salt to taste

  • Mix tenderizer and minced meat and keep aside for 1/2 hour.
  • Mix all the ingredients except egg to the minced meat and grind it in the mixer till it is a fine paste.
  • Add egg yolk and mix well. Keep the mixture in a refrigerator for one hour.
  • Divide the mixture into 12 portions.
  • Shape the mixture on skewers into sausage like cylinders. Use a little water while molding the mixture around the skewer.
  • Roast on charcoal or in a grill. While roasting baste once or twice.

Serve hot with green chutney.

Green Chutney

2 1/2 cups coriander leaves
1 1/2 cup mint leaves
6-8 green chilies
1 tsp salt
1 tsp lemon juice
water as required

  • Grind all the ingredients together adding 2 - 3 tbsp of water to get the desired consistency
