Recipe for :

Quinoa Pie

This recipe comes from Ana Florez in Peru. I asked Ana for a little background and this is what she had to say:

"As I love to cook, my hobby is collecting recipes from many countries. A short time ago I started my own catering service, as well as doing my other job which is bookbinding. Both I do at home. Before that I was working for an oil company, but it recently closed down its operations in Peru"

1 1/2 cups of cooked quinoa
1 cup cooked and diced chicken
1 diced tomato
1 medium onion finely chopped
5 black olives
1 hard boiled egg
3 fresh eggs
1/2 cup diced ricotta cheese
2 tablespoons paprika
1 clove garlic,
1/4 cup chopped parsley
Parmesan cheese.

  • Sauté onion, garlic in oil, add chicken, tomato, paprika, salt, pepper, parsley, simmer for a couple of minutes . If it dries add a little of chicken stock.
  • Put quinoa in a bowl and add chicken mixture and 3 beaten eggs. Mix well and add raisins, olives, cheese. Correct seasoning with salt and pepper.
  • Grease baking pan and place half of quinoa, sprinkle slices of hard boiled egg and cover with rest of quinoa and sprinkle with Parmesan cheese.
  • Place in hot oven for 15 / 20 minutes. Serve hot.
