I love to cook, my hobby is collecting recipes
from many countries. A short time ago I started
my own catering service, as well as doing my other
job which is bookbinding. Both I do at home. Before
that I was working for an oil company, but it
recently closed down its operations in Peru"
pie is from the Andes region".
1/2 cups of cooked quinoa
1 cup cooked and diced chicken
1 diced tomato
1 medium onion finely chopped
5 black olives
1 hard boiled egg
3 fresh eggs
1/2 cup diced ricotta cheese
2 tablespoons paprika
1 clove garlic,
1/4 cup chopped parsley
onion, garlic in oil, add chicken, tomato, paprika,
salt, pepper, parsley, simmer for a couple of
minutes . If it dries add a little of chicken
quinoa in a bowl and add chicken mixture and
3 beaten eggs. Mix well and add raisins, olives,
cheese. Correct seasoning with salt and pepper.
baking pan and place half of quinoa, sprinkle
slices of hard boiled egg and cover with rest
of quinoa and sprinkle with Parmesan cheese.
in hot oven for 15 / 20 minutes. Serve hot.
