Recipe for :

Lima Pudding
 

This recipe comes from Ana Florez in Peru. I asked Ana for a little background and this is what she had to say:

"As I love to cook, my hobby is collecting recipes from many countries. A short time ago I started my own catering service, as well as doing my other job which is bookbinding. Both I do at home. Before that I was working for an oil company, but it recently closed down its operations in Peru"

Ingredients

1 loaf bread without crust
1 can evaporated milk
6 eggs
3 ozs. Butter or margarine,
3/4 cup raisins,
1/2 cup nuts,
lemon rind,
1/3 cup brandy.

Topping:
3 eggs
3/4 cup confectionner´s sugar

Method
  • Break bread into small pieces and soak in milk.
  • Melt the butter and leave to cool.
  • Beat the eggs and add to bread mixture, together with the melted butter, raisins, ground nuts, lemon rind and brandy.
  • Mix well and pour into greased baking pan and cook in double boiler oven at medium temperature.

Topping:

  • Beat 3 egg whites until stiff together with 3/4 cup of confectionner's sugar.
  • When the pudding is unmolded spread this over top of pudding and bake until browns a little.

Serves 6
