Recipe for :

Chicken Schnitzels with Lemon Chive Sauce

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


4 chicken breast fillets
plain flour
2 eggs, lightly beaten
2 tablespoons milk
packaged breadcrumbs
1/3 cup oil.

Lemon Chive Sauce:
1 tablespoon cornflour
1 cup water
1/4 cup lemon juice
1 small chicken stock cube, crumbled
1 tablespoon honey
1 tablespoons brown sugar
1 tablespoon chopped fresh chives

  • Using meat mallet, gently pound fillets between plastic wrap until thin.
  • Toss schnitzels in flour, shake away any excess flour.
  • Dip into combined eggs and milk, then in breadcrumbs to coat.
  • Heat oil in pan, add schnitzels, cook until well browned and tender (do this just before you are ready to serve).
  • Serve with lemon chive sauce.

Lemon Chive Sauce:

  • Blend cornflour with water in pan, add juice, stock cube, honey and sugar. Stir over heat until sauce boils and thickens. Stir in chives.
