Recipe for :

Chocolate Soufflé
 

This recipe comes from a book I picked up in a second-hand bookshop - a great source for out of print recipes and for finding that recipe that is a little different.

Ingredients

1/2 cup

plain (all-purpose) flour

1 1/4 cup

milk

300ml
3/4 cup

plain chocolate, grated

eggs, separated

egg white

1/4 cup

sugar

icing sugar
Method
  • Melt the butter in a pan and stir in the flour. Remove form heat and stir in the milk. Return to heat and bring to boil stirring. Cook gently for 2 minutes, stirring all the time.
  • Remove from heat and stir in the chocolate.
  • Beat in the egg yolks.
  • Whisk all the egg whites until stiff. Whisk in the sugar a little at a time.
  • Fold the chocolate sauce into the egg whites.
  • Pour the mixture into 6 greased soufflé ramekins.
  • Bake in the oven for about 40 minutes until well risen and firm.
  • Serve dredged with icing sugar.
