Tomatoes with Fresh Herbs

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


4 tablespoons chopped parsley
2 tablespoons each chopped basil and tarragon
2 tablespoons finely chopped onion (spanish red onions are great!)
2 spring onions, finely chopped
1 clove garlic, crushed
6 tablespoons olive oil
3 tablespoons wine vinegar
1 teaspoon clear honey
salt, pepper
8 large ripe tomatoes, skinned and sliced

  • Mix the herbs, onions and garlic together, then gradually add the oil, vinegar and honey to form a thick sauce.
  • Season well with salt and pepper.
  • Arrange a layer of tomatoes on a serving platter and spoon over some dressing.
  • Put another layer of tomatoes on top and spoon over more dressing. Continue with these layers until all the ingredients are used.
  • Cover and chill for 30 minutes.
