Thai Shrimp Soup

Indian spices, Chinese style and Pacific flavours are fused into a cuisine of unique fragrance and taste. Mastering the culinary art of Thailand depends not on the number of ingredients used but in exploiting the flavour of each to the full.


2 tsp Galangal
1 - 3 Birdseye Chillies
1 lb Whole Shrimp
2 tsp Lemongrass
1½ litres / 2½ pints Chicken Stock
6 Kaffir Kime Leaves
1 Garlic Clove, crushed
3 tbsp Lime Juice
1 tbsp Fish Sauce (Nam Pla)
Mushrooms, big handful, sliced - Any type: Wilder the better! (Ceps are great.)
6 thin slices Lime
3 tbsp chopped Fresh Coriander Leaves

  • Just cover the galangal with hot water for 10-15 minutes to soften & infuse then mash together.
  • Finely chop the birdseye chillies and prepare the same as the galangal but separate.
  • Peel & devein the shrimp, keeping those heads & shells!
  • Now to make the soup stock - Put chicken stock, lemongrass, lime leaves, garlic, galangal and those shrimp heads & shells in a saucepan.
  • Get boiling and simmer for 15 minutes.
  • Strain and discard the solids, leaving a wonderfully aromatic stock.
  • Add the lime juice, fish sauce, birdseye chillies and mushrooms - Bring to an easy boil.
  • Throw in the shrimps, cook for 2 minutes until firm & opaque.
  • Garnish with lime & coriander.
