Anchovy Fillets in Green Sauce

This recipe of the Piedmont region of Italy comes from the web site of who are online suppliers of wine and food native to the Piedmont region.


300 g anchovy
1 garlic clove
100 g parsley
oil and vinegar

  • Wash, bone and divide the anchovy in fillets. Put them to soak some hours in vinegar until they lose all the bones. Rinse and let dry.
  • Mince well garlic and parsley, put them in a bowl and add enough oil to get a smooth sauce. Arrange the anchovy in a concave dish and pour in the sauce.
  • Serve the next day.
