Recipe for :

Risotto with Barolo Wine

This recipe of the Piedmont region of Italy comes from the web site of who are online suppliers of wine and food native to the Piedmont region.


400 g rice
100 g butter
1 small onion
2 glasses Barolo wine
1 liter broth
2 spoons grated Parmesan cheese
salt and pepper

  • Mince well the onion and sauté, not too long, with 50g butter.
  • Add the rice, sauté for a while then add the wine and let it consumes itself.
  • Add the broth a little at the time until the rice is cooked smooth (not dry).
  • Turn off the fire and add 50g butter, the Parmesan cheese and some pepper.
  • Mix up and serve. Eventually add slices of truffle directly on the dishes.

Serves 4
