Recipe for :

Risotto with Barolo Wine
 

This recipe of the Piedmont region of Italy comes from the web site of cru-doc.com who are online suppliers of wine and food native to the Piedmont region.

Ingredients

400 g rice
100 g butter
1 small onion
2 glasses Barolo wine
1 liter broth
2 spoons grated Parmesan cheese
salt and pepper

Method
  • Mince well the onion and sauté, not too long, with 50g butter.
  • Add the rice, sauté for a while then add the wine and let it consumes itself.
  • Add the broth a little at the time until the rice is cooked smooth (not dry).
  • Turn off the fire and add 50g butter, the Parmesan cheese and some pepper.
  • Mix up and serve. Eventually add slices of truffle directly on the dishes.
