Salmon with Pink and Green Peppercorns Sauce

1 tbsp Olive Oil
1 tbsp Butter
4 Salmon Steaks
Sea Salt
1 tsp crushed Pink Peppercorns
1 tsp crushed Green Peppercorns
4 tbsp Dry White Wine
2 tsp Fresh Tarragon
100 ml Double Cream

  • In a frying-pan, heat the oil & butter.
  • Sprinkle some sea salt onto each side of the salmon then fry until just cooked through, about 3 - 4 minutes each side.
  • Remove and keep warm.
  • Mix the pink & green peppercorns and wine in the pan and simmer gently until reduced by half.
  • Stir in the cream & tarragon and boil gently until slightly thickened.
  • Serve the salmon with the sauce poured over.
