Native Aztec and Mayan dishes dramatically blended with those of their Spanish conquerors create a cuisine of fearsome power - Mexican cuisine.

At its core is the wonderful chilli pepper with its myriad of varieties ranging from subtly warming nutty flavours to volcanic power. The result is a cuisine of stunning variety.

Ingredients

3 tsp Pasilla Chillies
2 tbsp Olive Oil
1 finely chopped Onion
3 crushed Garlic Cloves
1 deseeded & chopped Red Pepper
1 deseeded & chopped Yellow Pepper
8 chopped Tomatoes
375ml / 6fl oz Dry White Wine
1 tbsp Sun-Dried Tomato Paste
2 tbsp finely chopped Fresh Coriander
2 tsp Cayenne Pepper
1 tsp Thyme Dried
1 tsp Oregano Dried
1 tsp Sea Salt
1 tsp crushed
Black Peppercorns

The Seafood:
Use all or what's available (or anything else you fancy) from the following
6 Oysters
12 Clams
3/4 lb Mussels, in shells
3/4 lb Shrimp, shelled & deveined
3/4 lb Halibut Fillets, bite sized pieces
1/2 lb Scallops

Method
  • Heat olive oil in a large frying-pan.
  • Sauté the onion and garlic for two minutes.
  • Toss in the pasilla chillies, red and yellow peppers and cook for a further 3 minutes.
  • Add the tomatoes, wine, sun-dried tomato paste, coriander, cayenne, thyme, oregano and salt and pepper.
  • Simmer for 10 minutes.
  • Add the oysters, clams and mussels and simmer, covered for 3 minutes.
  • Mix in the shrimps and cook for a further minute then add the halibut & scallops for a minute more.
  • Remove & discard any unopened shellfish.
  • Serve in soup bowls.

Serves 4+
