The African continent and the African cuisine has been shaped by many influences: The Arabs, Portuguese, French and British.

In marrying these cultures together, an intensely powerful cuisine has evolved. At its heart is the chilli pepper, imparting an explosive fire to its many dishes rivalled only by the searing heat of the African plains themselves.

Ingredients

1 tsp White Cumin Seeds
1 tsp Cloves
150ml / 1/4 pint Groundnut Oil
900g / 2lb peeled & cubed Yam
1 tsp Crushed Red Chillies
1 tbsp Fresh Coriander
1 chopped Red Onion
1 skinned & quartered Tomato
1 diced Carrot
2 chopped Garlic Cloves
1 tsp Turmeric
300ml / 1/2 pint Coconut Milk
1.2 litres / 2 pints Vegetable Stock
1 tbsp Cornflour (mixed with 2 tbsp cold water)
2 Bay Leaves
2 thickly sliced Green Bananas
6 Cashew Nuts,
Sea Salt, to taste
Black Peppercorns, to taste

Method
  • Dry-roast the white cumin seeds and cloves.
  • Allow to cool and grind. Put to one side.
  • In a large pan, fry the yam pieces in medium hot oil until golden.
  • Remove the yam pieces and set aside.
  • Turn the heat down a bit and throw in the crushed chillies, coriander, onion, tomato, carrot, garlic, turmeric and ground cumin & cloves.
  • Fry for two to three minutes.
  • Add the coconut milk and stock and bring to the boil.
  • Turn down the heat to a gentle simmer, then stir in the cornflour.
  • Throw in the bay leaves, yams and banana, season to taste, cover and simmer for 30 minutes.
  • Sprinkle cashew nuts on top.
  • Allow to rest for 10 minutes then serve.
