Recipe for :

Italian Sausage, Peppers and Onions Fettuccine

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.>


1 Tablespoon Olive oil
1 pound Italian-style link sausage
2 medium Onions, sliced
1 large Green bell pepper, seeded and sliced
1 1/2 cups Tomatoes, crushed
1/4 cup Red wine
1 1/2 teaspoon Basil
1/2 teaspoon Garlic, minced
1 pound Fettuccine, dry

  • Heat the oil in a skillet. Add the sausages and cook fully. Remove them from the pan.
  • Add the onions and peppers. Cook until just soft.
  • Add the tomatoes, wine, basil and garlic. Simmer for 30 minutes.
  • Slice the cooked sausage into 1/4-inch pieces. Add to the sauce.
  • Cook the fettuccine to desired doneness. Drain. Place in bowls and top with the warm sauce.
