Amaretti Peaches

7 peaches
2 tbsp sugar
30g unsalted butter
6 or more crumbled amaretti biscuits
1 egg yolk

  • Preheat the oven to 180º
  • Wash and dry six un-peeled peaches, cut carefully in half and scoop out a deep cavity in the middle, ideally using a melon baller
  • Collect the removed peach flesh in a bowl and either dice or mash with a fork, together with the flesh from the 7th peeled peach
  • Add the sugar, the egg yolk and the crushed biscuits to the peach flesh and mix thoroughly
  • Spoon the mixture carefully into the peach halves, making it dome up slightly
  • Pack the peaches closely together in a single layer in a buttered oven dish, dot each peach half with a dab of butter, and bake at 180 degrees for about an hour
  • Serve warm or cold


  • I like to add the peach kernel inside the peach stone to the filling: it has the amaretti taste of bitter almonds
  • An alternative is to add a drop of bitter almond essence to the filling
