Mushrooms Stuffed

1 Dozen Mushrooms, peeled and washed with stems cut and put aside
1/2 Cup Bread Crumbs
2 Garlic Cloves, minced
Stems from Mushrooms, chopped
1 Tbsp. Parsley
2 Eggs, beaten
Grated Cheese
Olive Oil
1/2 Cup Ricotta
Hot Pepper Flakes

  • Preheat oven to 400ºF
  • Mix all ingredients together including chopped stems to make the stuffing.
  • Pack stuffing into mushrooms and stand them upright on a baking pan.
  • Drizzle with olive oil and bake.

Serves 6
