Chicken Balsamic with Angel Hair

"I first heard of making Chicken this way from my friend, Judy. She had gotten the recipe from her daughter, Kathleen. They're two Irish women who think Italian and cook Italian. I put a bit of my ideas into it by including the Macaroni, Cheese, and Tomatoes. Italian women have a tendency of always including Macaroni, Cheese, and Tomatoes into foods".

Ingredients

2 Chicken Breasts without bone, cut into small pieces
Olive Oil for frying
Fresh Garlic, chopped
Fresh Basil to taste
2 - 3 Tbsps. Balsamic Vinegar
1 Box Angel Hair Macaroni
Grated Cheese to taste
6 - 8 Grape Tomatoes, cut in half
Little Water

Method
  • Sauté chicken and garlic in olive oil.
  • When done, add balsamic vinegar and a few grape tomatoes. Cook a bit longer.
  • You can add a little water to this to make a light sauce.
  • Cook angel hair macaroni according to package directions. Drain angel hair, and place in bowl.
  • Toss entire chicken mixture including olive oil, vinegar, and water into pasta.
  • Add fresh Basil and toss some more.
  • Top with grated cheese when serving.
