of making Chicken this way from my friend, Judy.
She had gotten the recipe from her daughter, Kathleen.
They're two Irish women who think Italian and
cook Italian. I put a bit of my ideas into it
by including the Macaroni, Cheese, and Tomatoes.

Chicken Breasts without bone, cut into small
Olive Oil for frying
Fresh Garlic, chopped
Fresh Basil to taste
2 - 3 Tbsps. Balsamic Vinegar
1 Box Angel Hair Macaroni
Grated Cheese to taste
6 - 8 Grape Tomatoes, cut in half
chicken and garlic in olive oil.
done, add balsamic vinegar and a few grape tomatoes.
Cook a bit longer.
can add a little water to this to make a light
angel hair macaroni according to package directions.
Drain angel hair, and place in bowl.
entire chicken mixture including olive oil,
vinegar, and water into pasta.
fresh Basil and toss some more.
with grated cheese when serving.
