Ham Steaks with Southwest Rub
 

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. You will be able to find out more about Martin when his Biography page is published.

Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

"Ask the butcher to cut the ham steaks for you for the tastiest, easiest dinner you've made in a long time (try it for brunch, too!)".

Ingredients

For the rub:
2 tablespoons chilli powder
2 teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon cayenne pepper
1 teaspoon brown sugar
1/2 teaspoon freshly ground pepper
1 tablespoon butter, melted

2 center-cut ham steaks, 3/4" thick

Method
  • In a small bowl, combine all rub ingredients.
  • Brush melted butter on both sides of steaks; sprinkle rub on both sides of the steaks.
  • Grill ham over Direct Medium heat for 6 minutes, turning once halfway through grilling time.
  • Serve with mashed sweet potatoes and green beans, if desired.
