Luertiis Risotto
 

This Luertiis Risotto recipe comes from Giorgio who runs a website known as Cucina Crema. Crema which is located near Milan, Italy, is a little known area culinary wise and the site is dedicated to promoting the culinary traditions and recipes from the region.

Luertiss, the wild hop, is the name of the wild luppolo plant which grows in the Crema area. The plant is similar to asparagus and is typically found along the rivers and streams of the Po plain. It looks like the wild asparagus and has a bitterish taste. It is normally used in soups, omelettes and risotto.

Ingredients for Luertiis Risotto

500 gm of Carnaroli Rice
1 kg of washed and parboiled Luertiis
60 gm Of butter
1 litre of vegetables stock
grated Parmesan
1/2 white onion chopped
1 glass of dry white wine
Salt.

How to make Luertiis Risotto

  • Melt half of the butter in a large saucepan then add the chopped onion and keep stirring it until it starts to cook
  • Add the rice and sauté it for a couple of minutes
  • Add the wine and continue to cook until the wine is absorbed.
  • Then add the Luertiis and the hot stock and cook for 15 minutes stirring continuosly
  • Remove from the heat. Add the butter and the parmesan and allow to melt before serving piping hot.

Serves 6
