Ingredients for Gratin of Smoked Oysters

16 good size oysters
2 lemons
1 Lollo Rosso

For topping:
1/2 crusty loaf
1/2 tspn parsley
1/2 tspn basil
1/2 tspn coriander
1/2 tspn tarragon
1/2 tspn dill
1/2 tspn salt
1/2 tspn pepper
2 tblspns good quality olive oil

How to make Gratin of Smoked Oysters

  • Break loaf into breadvrumbs. Chop the herbs.
  • Combine the herbs and breadcrumbs with olive oil and season with salt and pepper to make the topping.
  • Cover each oyster with topping
  • Cook under grill until golden brown
  • Place four on each plate
  • Garnish with Lollo Rosso and Lemon
