Marinated Mushrooms

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


250g (8oz) button mushrooms
3 tablespoons lemon juice
1/2 cup oil
2 tablespoons chopped parsley
1/4 teaspoon salt
1/4 teaspoon tarragon

  • Wash mushrooms, remove stalks, slice thinly.
  • Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley in bowl. Add mushrooms and mix well.
  • Cover and marinate mixture 4 hours or overnight.


  • Marinated mushrooms are also delicious tossed into green salad. Remove mushrooms from marinade with slotted spoon, add to salad greens; add enough of the marinade to coat salad greens lightly, toss well.
