was originally started as a place to publish my
favourite recipes and those I had either created
or modified to my own taste. The sheer volume
of recipes I have received since those early days,
over two years ago, has meant that I have had
very little time to write down my own modest efforts
- at least here is one for you to try.
guiding principal when creating food is to try
and keep it simple but at the same time creating
food which makes you want to ask for more.

cooked smoked trout fillets (cold)
3 or 4 cloves garlic
200 ml milk
100 gm fresh goats cheese
1 tsp green peppercorns
and finely chop your garlic cloves.
a saucepan add the galic and milk and bring
to the boil.
from the heat, cover and leave to stand for
at least two hours to infuse.
milk has infused put through a sieve.
a seperate bowl place goats cheese and soften
with a fork. Gradually blend in the milk until
a creamy consistency is achieved. (It is not
necessary to use all the milk - just enough
to make the sauce to the consistency you want).
the green peppercorns very finely with a knife
and add to sauce, stirring to blend evenly.
trout fillets on small plates and top with sauce.
quantity of garlic can be varied according to
how strong you want it.
be served with a few salad leaves or garnished
with some freshly chopped herbs such as coriander.
of trout you could use any other smoked fish
of your choice.
