Gai Phad Med Mamuang - Fried Chicken with Cashewnuts

600 gms Chicken Breast, Diced
3 tbs Cooking Oil
120 gms Cashew Nuts, Deep Fried
1 pcs Onion, Diced
6 pcs Dried Chillies, Deep Fried & Cut
3 pcs Spring Onions
2 tbs Oyster Sauce
1 tbs Sugar
1 tbs White Pepper Powder
3 tbs Chicken Stock
1 tbs Black Soya Sauce
1 tbs Fish Sauce


  • Heat the cooking oil in a wok and stir fry the meat until almost done. Remove and set aside.
  • Then stir fry cashews, onion, chillies and spring onions; make the sauce by adding the chicken stock, oyster sauce and black soy sauce.
  • Add meat and season with sugar, pepper powder and fish sauce. Serve once the meat is cooked.
