Recipe for :

Poached Alaska Cod with Lemon Butter Sauce

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


1 1/2 lbs. cod fillets, thawed if necessary
1 quart water
1/4 cup lemon juice
1 small onion, sliced
1 bay leaf
4 each peppercorns and whole cloves
1 teaspoon salt
minced parsley

Lemon Butter Sauce:
1/4 cup butter
2 tbsps lemon juice


  • Cut cod into serving-size pieces.
  • Combine water, lemon juice, onion and seasonings. Bring to boil and simmer for 20 minutes.
  • Add cod. (If necessary, add boiling water to cover cod.)
  • Simmer, covered, for 5 to 10 minutes or until cod flakes easily when tested with a fork.
  • To serve place each portion of cod on a plate and pour Lemon Butter Sauce over cod. Garnish with parsley.

Lemon Butter Sauce:

  • Melt butter in a small pan.
  • Add lemon juice.
  • Serve warm. Makes about 1/3 cup.
