and Graphic artist Martin James. Martin, who originally
comes from New Zealand, is now living with his
wife and children in Copenhagen as he is currently
principal Dancer with The Royal Danish Ballet.

so gifted it seems unfair that Martin should also
be talented in the kitchen as well but he has
agreed to share some of his recipes with us which
is great news.
1/2 lbs. cod fillets, thawed if necessary
1 quart water
1/4 cup lemon juice
1 small onion, sliced
1 bay leaf
4 each peppercorns and whole cloves
1 teaspoon salt
1/4 cup butter
2 tbsps lemon juice
cod into serving-size pieces.
water, lemon juice, onion and seasonings. Bring
to boil and simmer for 20 minutes.
cod. (If necessary, add boiling water to cover
covered, for 5 to 10 minutes or until cod flakes
easily when tested with a fork.
serve place each portion of cod on a plate and
pour Lemon Butter Sauce over cod. Garnish with
butter in a small pan.
warm. Makes about 1/3 cup.
