Recipe for :

Grilled Marinated Swordfish

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


2 swordfish steaks, cut 3/4" to 1" thick

1/2 cup lime juice (3 to 4 times)
Grated zest of 1 lime
2 cloves garlic, minced
1 1/2 teaspoons grated fresh ginger root
1/4 cup oil, olive or a mixture of olive and vegetable oil
Salt and freshly ground pepper


  • Combine ingredients for marinade, and pour over fish.
  • Marinate for as little as 15 minutes or as long as 4 hours.
  • Lift steaks out of marinade, and grill 10 minutes per inch of thickness.
  • Strain marinade and heat to boiling. Boil for 1 minute, and serve with fish.
