Recipe for :

Orange Carrots

Following my appeal for carrot recipes with a difference, I was sent this one by Steph Daly. He is from Glasgow and is currently studying IT with a view to going in to teaching.

He says: "Cooking is something that I find totally relaxing and gives me a great deal of pleasure. I suppose my motto is that if you care for what and the way you cook something, you care for the people about to eat it".

3 carrots (medium)
Fresh ginger (one inch)
Good knob of Butter
Juice of a large Spanish orange (a blood orange would be an interesting alternative)


  • Julienne and parboil the carrots.
  • Drain and leave in the hot pan to dry off.
  • In another pan add butter and grated ginger and let the butter take the ginger flavour.
  • Add the carrots and sauté for a couple of minutes.
  • Add the juice of the orange and reduce it until the carrots are nice and glossy.

I usually serve this with plain roast chicken or duck, and baby potatoes boiled in their skins, tossed in butter with fresh Tarragon.
