Recipe for :

Orange Glazed Lamb Steaks

Working at the BBC Good Food Show last November gave me very little opportunity to actually see much of the show. However, one interesting item I did get given was a CD-Rom of recipes, promoting New Zealand Lamb. There are some first class recipes - hopefully they will not mind me publishing a few!

How to introduce New Zealand Lamb? That is probably best left to the New Zealanders themselves:

New Zealand Lamb . . . pure and simple

Give your next meal an international flavor with New Zealand Lamb. Our natural grazing lands, combined with a long and proud history of providing the world with the finest quality food products means that our lamb is always tasty, tender and delicious. New Zealand Lamb has a succulent flavor.

4 New Zealand Lamb leg bone steaks

For the topping:
60ml / 4 tbsp thick- cut orange marmalade
15ml / 1 tbsp whisky
15ml / 1 tbsp red wine vinegar
15ml / 1 tbsp freshly chopped coriander

  • Trim the steaks and snip the edges at 2.5cm / 1in intervals to prevent the meat curling as it cooks.
  • Mix the marmalade with the whisky, red wine vinegar and coriander.
  • Place the steaks on the grill pan, brush with a little of the glaze and cook under a preheated grill for about 10 minutes until brown.
  • Turn over the steaks, spread with more glaze and cook for a further 10 minutes until tender and slightly caramelised.
  • Top with any remaining glaze and serve garnished with orange slices and fresh coriander.

Hints and Tips

  • Replace the whisky with orange juice, if preferred.
  • Other fresh herbs, such as mint or oregano, can be used in place of the coriander.
