For a simple but satisfying meal try Martin Blunos's recipe for home-made dumplings, pan-fried with bacon.

Ingredients

400g plain flour
1 1/2 tbsp semolina or ground rice
salt and freshly ground pepper
4 medium eggs
100ml water, cold
100ml full fat milk, cold
25g clarified butter
115g smoked bacon, finely chopped
nutmeg, freshly grated
handful of flat-leafed parsley, leaves picked, stalks discarded

Method
  • Sieve the flour, semolina and a pinch of salt into a mixing bowl. Beat in the eggs, cold water and cold milk, making a thick smooth batter.
  • Bring a large saucepan of salted water to a gentle simmer. Rub the batter through a sieve into the pan, creating the 'spatzli'.
  • Poach the spatzli for 3 to 4 minutes, then remove with a slotted spoon and plunge into iced water; drain well.
  • Heat the clarified butter in a large, non-stick frying pan. Add the bacon and fry, stirring. Once the bacon starts to colour, add in the drained spatzli.
  • Fry the spatzli mixture for 3 - 5 minutes, stirring often. Season with salt, freshly ground pepper and freshly grated nutmeg.
  • Add in the parsley, fry for 1 minute more, mixing in the parsley well. Serve at once.
