Recipe for :

Lemon Bread
 

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. You will be able to find out more about Martin when his Biography page is published.

Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

Ingredients

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 stick butter, softened
1 cup sugar
2 eggs
Grated zest of lemon
1 teaspoon lemon extract
3/4 cup lemonade

Method

  • Preheat oven to 350°
  • Butter and flour a 9 x 5 x 3 inch loaf pan.
  • Line the bottom of the pan with wax paper.
  • In a medium bowl stir together flour, baking powder, and salt.
  • In a separate bowl beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time beating well after each addition.
  • Add the lemon zest and lemon extract.
  • Spread evenly in pan.
  • Bake for 60 to 65 minutes, or until a toothpick inserted in the centre of the loaf comes out clean.
