James. Martin, who originally comes from New Zealand,
is now living with his wife and children in Copenhagen
as he is currently principal Dancer with The Royal
Danish Ballet. You will be able to find out more

so gifted it seems unfair that Martin should also
be talented in the kitchen as well but he has
agreed to share some of his recipes with us which
is great news.
sweet tender young carrots, trimmed and scrubbed
300ml light lager
1 teaspoon soft brown sugar
salt and pepper
the carrots and lager into a saucepan and bring
to the boil.
for 10 minutes until just tender, then add the
butter and sugar.
vigorously uncovered until the carrots are cooked
and the liquid is reduced to a shiny glaze.
