Deep Fried Parsnips

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


8 parsnips or more
1 dessertspoon flour
1 teaspoon curry powder or more
3 eggs
salt and pepper
little melted butter


  • Cook parsnips and put through sieve.
  • Add flour, curry powder, salt and pepper, well beaten eggs and butter.
  • When mixture is smooth, drop spoonfuls into very hot butter and fry until light brown, turning once.

Can be served with rice and hot brown gravy.
