Sauce for Magret

mango, peeled, chopped
3 x balls of ginger in syrup, chopped, with about
1 tbls of the syrup
1 large glass white wine
3 passion fruit
Black pepper to season
the mango and ginger with the wine into a sauce pan,
bring to boil and simmer until mango is soft.
in a blender, then add the passion fruit.
again, then put through a sieve.
this with just black pepper.
