Recipe for :

Tropical Sauce for Magret

This recipes comes from Graham in France who used to run Holiday-en-France.

As a brief introduction this is what Graham says on his web site:

"Sally & I are the parents of three children who are aged 11, 9 and 3 so if you are bringing children with you there will be someone to play with!

We moved to Mazamet in late 2002 and have lived through a cold winter. I work as a chef in a local chateau and Sally spends her time decorating this vast house and maintaining the garden."

"Here is a recipe of mine. It is the perfect accompimient for lovely pink Duck breast or I should say Magret - after all this is France!"

Ingredients

1 mango, peeled, chopped
3 x balls of ginger in syrup, chopped, with about 1 tbls of the syrup
1 large glass white wine
3 passion fruit
Black pepper to season

Method

  • Put the mango and ginger with the wine into a sauce pan, bring to boil and simmer until mango is soft.
  • Wizz in a blender, then add the passion fruit.
  • Wizz again, then put through a sieve.
  • Season this with just black pepper.
