Ingenious Tomato and Rosemary Broth

6 red ripe tomatoes
1 clove garlic
1 sprig rosemary
30g tomato concasse (diced flesh of 1 tomato, skinned and de-seeded)
Fresh chive tips

  • Quarter the tomatoes and place them into a food processor along with the garlic clove and a few leaves of rosemary.
  • Blend until it reaches a pink mush.
  • Place into a pan and bring to the boil. Simmer for 3 - 4 minutes.
  • Pass through a strainer lined with a damp muslin cloth (or damp clean tea towel) and leave to drip into a jug. Do not be tempted to squeeze the cloth or the liquid will become cloudy!

To Serve:

  • Serve at room temperature in a small teacup or similar. Garnish with the tomato concasse and a few chive tips.


The broth can be prepared in advance. Garnish just before serving.
