Fried Mushrooms

Ingredients

50 gm butter
50 ml olive oil
1 pc garlic clove - sliced
1 cup mushrooms of choice - sliced
sq coriander / parsley - chopped
sq basil leaves - shredded

Method

  • Gently melt the butter with the olive oil in a large over sized pan
  • Add the sliced garlic clove and cook gently (sweat) without colour until the garlic aromas are released
  • Turn up the heat to quite fierce and add the mushrooms, toss together and saute until mushrooms are well coated and warmed through
  • Add sufficient coriander and basil to taste, toss or stir through and serve while still hot

Chef's Note:

Use to accompany fish, steak, chicken dishes, etc

Serve as an appetiser with toasted slices of French bread

Serve as an appetiser by filling a vol au vent with them

Serve as snacks or a lunch dish by making calzone, wrapped in puff pastry or phylo pastry parcels and baked

Toss through your favourite cooked pasta: fettuccine, penne, etc
