Kumquat and Pineapple Salad Dressing

Ingredients

150 ml cider vinegar
500 mlvirgin olive oil
6 kumquats
150 gm fresh pineapple
1 spring onion
6 sage leaves

Method

  • Combine the olive oil and vinegar
  • Add the de-seeded and chopped kumquat and chopped pineapple
  • Season to taste with sea salt and freshly milled pepper
  • Allow to sit at room temperature for at least one hour for the flavours to infuse
  • Taste and add some liquid honey if required
  • Add the finely sliced spring onion and sage leaves just prior to serving
