was
originally started as a place to publish my favourite
recipes and those I had either created or modified to
my own taste. The sheer volume of recipes I have received
since those early days, over two years ago, has meant
that I have had very little time to write down my own
modest efforts - at least here is one for you to try.
My
guiding principal when creating food is to try and keep
it simple but at the same time creating food which makes
you want to ask for more.

Ingredients
Base:
12 oz sweet wholemeal biscuits
6 oz butter
Topping:
8 tbsps cornflour (level)
1 pt water
2 oz butter
2 oranges
8 oz castor sugar
4 eggs
Method
Base:
- Place
biscuits in mixer and pulse until resembling bread
crumbs (alternatively place in polythene bag and crush
gently with rolling pin) and then put into bowl.
- Add
the melted butter and mix thoroughly.
- Fill
base of pie / flan dish (approximately eleven inch
diameter - give or take an inch) and firm down. Put
in fridge to set for about an hour.
Topping:
- Grate
the zest of the oranges and squeeze out the juice.
Put to one side.
- Blend
the cornflour with a little of the water to make a
runny paste.
- Put
the remaining water, together with the butter, and
bring to the boil until butter is melted. Pour over
the cornflour paste and sire well. Return to the saucepan
and cook over low hear for two to three minutes, stirring
continuously.
- Remove
from the heat and add the orange zest and juice together
with 4 oz. of castor sugar. Mix well.
- Separate
the egg yolks from the whites. Stir the egg yolks
into the orange mixture and pour into pie / flan dish.
Spread evenly.
- Put
the egg whites into a mixing bowl and whisk until
it stands in stiff peaks. (If the peaks turn over
the whisk for a little longer).
- Add
2 oz castor sugar gradually and whisk again until
stiff peaks are formed.
- Fold
in the remaining 2 oz castor sugar with a metal spoon.
- Pile
the meringue mixture roughly over the orange filling,
completely covering it to an even depth.
- If
serving hot: bake in the middle of a pre-heated
oven at 400°F / 200°C / Gas 6 for 10 minutes.
- If
serving cold: bake in the middle of a pre-heated
oven at 315°F / 150°C / Gas 2 for 30 minutes.
