Ingredients

250 gm sugar
125 gm butter
4 pc eggs
375 gm flour
500 ml milk
20 gm baking soda
1/2 tsp baking powder
2 pc bananas (purée)
sq vanilla essence

Method

  • Cream together the sugar and butter and then add the beaten eggs gradually, and put to one side
  • Blend the bananas with the milk and vanilla essence (in a food processor)
  • Sift together the flour, baking soda and baking powder
  • Mix all the ingredients together and pour into a well greased cake/loaf tin
  • Bake at 180°C for 40 - 60 minutes or until a small knife comes out clean when inserted into the cakes centre
  • Remove from the oven and allow to cool in the tin for 5 - 10 minutes
  • Turn out gently onto a cooling rack to thoroughly cool

Chef's Note:

If your mixture appears to separate when adding the beaten egg, just add a little of the sifted flour from your recipe and continue to mix, this will hold your mixture together .

Enjoy and bon appetit . . . . .
