Yellow Cornmeal Bread

Ingredients

130 gm strong flour
110 gm castor sugar
130 gm coarse yellow cornmeal
200 ml milk
50 ml oil
4 tsp baking powder
2 pc eggs

Method

  • Sift together flour, sugar, baking powder and salt, stir in cornmeal
  • Beat lightly together the eggs, milk and oil
  • Stir egg mixture into the flour mixture, and beat until smooth
  • Pour mix into a well oiled loaf tin
  • Bake at 220°C for 25 minutes
  • Alternatively the batter may be shallow fried for fried cornbread
