Pumpernickel

Ingredients

1 cup kibbled rye
1 cup hot water
1 tbs molasses 1 tbs
2 tbs honey
3/4 cup hot water
1 cup bran flakes
1 cup rolled oats
1 1/2 cup rye flour
1 tsp salt

Method

  • Soak the kibbled rye in the hot water and molasses overnight in a large bowl
  • Add the remaining ingredients
  • Spoon into a greased loaf tin
  • Cover with buttered tin foil
  • Place into a bain marie (roasting tray 1/3 full of water)
  • Bake at 170°C for 2 - 2 1/2 hours
  • Allow to cool overnight in the loaf tin
