A lovely moist chocolate pudding – what more needs to be said? Makes one big pudding or six small ones.

500g self-raising flour
7 eggs
500g butter, softened
500g caster sugar
100g melted dark chocolate
2 dessertspoons of milk
1 tsp vanilla essence
2 tsp strong coffee

  • Combine the sugar and butter until fluffy, add the eggs and continue to combine.
  • Add flour slowly, add chocolate, vanilla and coffee slowly and milk as necessary so it is smooth.
  • Put into a well-greased and lined bowl (bowls) to half way up.
  • Cover top with greaseproof paper and tie it with string.
  • Put into a steamer, which is already with water boiling below then reduce the heat to a simmer.
  • Cover the steamer with a lid and cook for 20 minutess for small bowls or 1/2hr for large bowl.
  • Take out and serve immediately - the middle should still be soft and runny.

Serve with Devon clotted cream – it’s nice with fresh berries too.
