have always seemed to find myself by accident or design,
in a kitchen. As the youngest child of a farming family
in Cornwall I was always the one helping my mother make
butter, bread and of course pasties. As a teenager in
school we were allowed to chose between metalwork or
domestic science, as the former was taught by a notorious
sadist and the latter was full of girls and I was the
only boy in the cooking class" - Italy

Ingredients
250g
of self-raising flour (or plain flour and baking powder)
80g of sugar
200g of butter
2 eggs
1 lemon
Damson or other jam
Method
Zest
the lemon then mix with the flour, sugar, butter,
and eggs to form soft dough.
- Keeping
aside a piece the size of a ping pong ball, push the
rest into a baking dish to form a layer about 1 cm
deep.
- Spread
the jam on the top to cover.
- Roll
and cut the remaining dough laying this over the top
to form a decorative lattice.
- Bake
for 20 minutes at 180° or until the lattice starts
to brown.
