Homemade Pasta

700 gm flour
6 eggs


  • Pile up the flour and break the eggs into the centre of the pile. Beat in the eggs with a fork taking a small amount of flour at a time.
  • When all the eggs have been beaten mix in the rest of the flour by hand until the pasta becomes smooth and homogenous.
  • Roll out on a board or marble table top and leave to dry for a few minutes. Fold the pasta onto itself and cut off the strips (tagliatelle) with a knife or pasta machine.
