Cod with Mushrooms

/ 1 lb Cod fillet, cut into large pieces
Salt and pepper
1 Tomato, skinned and sliced
50g / 2 oz Mushrooms, chopped
300ml / 10 fl oz. Dry Cider
50g / 2 oz Butter
25g / 1 oz. Flour
50g / 2 oz Cheddar Cheese, grated
Sliced Tomato and Freshly chopped Parsley to garnish
oven to 190°C, 375°F, Gas mark 5.
the tomato and the mushrooms it a shallow ovenproof
dish and lay the fish pieces on top. Season with of
salt and pepper then pour in the cider and dot the
fish with half the butter.
with a piece of greaseproof paper and bake in the
centre of the oven for about 15 minutes. Strain off
the cooking liquor and set aside for use in the sauce.
Place the greasproof paper back over the fish and
return to the oven to keep warm. Turn the oven up
to 200°C, 400°F, Gas Mark 6.
the remaining butter in a pan and add the flour. Cook,
stirring for 1-2 minutes then add the strained liquor
a little at a time, stirring constantly. Bring to
the boil and season to taste. Pour over the fish.
the mashed potatoes around the edge of the dish and
sprinkle the fish with grated cheese. Garnish with
slices of tomato and return to the oven for about
10 minutes until browned. Sprinkle with lots of chopped
parsley before serving.
