Devonshire Cod with Mushrooms

450g / 1 lb Cod fillet, cut into large pieces
Salt and pepper
1 Tomato, skinned and sliced
50g / 2 oz Mushrooms, chopped
300ml / 10 fl oz. Dry Cider
50g / 2 oz Butter
25g / 1 oz. Flour
Mashed Potatoes
50g / 2 oz Cheddar Cheese, grated
Sliced Tomato and Freshly chopped Parsley to garnish


  • Preheat oven to 190°C, 375°F, Gas mark 5.
  • Place the tomato and the mushrooms it a shallow ovenproof dish and lay the fish pieces on top. Season with of salt and pepper then pour in the cider and dot the fish with half the butter.
  • Cover with a piece of greaseproof paper and bake in the centre of the oven for about 15 minutes. Strain off the cooking liquor and set aside for use in the sauce. Place the greasproof paper back over the fish and return to the oven to keep warm. Turn the oven up to 200°C, 400°F, Gas Mark 6.
  • Melt the remaining butter in a pan and add the flour. Cook, stirring for 1-2 minutes then add the strained liquor a little at a time, stirring constantly. Bring to the boil and season to taste. Pour over the fish.
  • Pipe the mashed potatoes around the edge of the dish and sprinkle the fish with grated cheese. Garnish with slices of tomato and return to the oven for about 10 minutes until browned. Sprinkle with lots of chopped parsley before serving.
