Tie
the cinnamon, cloves and allspice loosely in a muslin
bag and place in a large saucepan together with the
cider and sugar. Bring just to boiling, reduce the
heat to low, and simmer for 10 minutes.
Meanwhile,
peel, halve and core the pears then add to the simmering
cider mixture and continue to simmer for a further
10 minutes.
Remove
from heat and leave to marinate in in the liquor for
at least 20 minutes. Serve warm or chilled.
