Poached Pears in Cider

2 Cinnamon Sticks
4 Whole Cloves
4 Allspice Berries
300ml / 10 fl oz. Dry Sparkling Cider
300g / 11 oz Sugar
4 Pears


  • Tie the cinnamon, cloves and allspice loosely in a muslin bag and place in a large saucepan together with the cider and sugar. Bring just to boiling, reduce the heat to low, and simmer for 10 minutes.
  • Meanwhile, peel, halve and core the pears then add to the simmering cider mixture and continue to simmer for a further 10 minutes.
  • Remove from heat and leave to marinate in in the liquor for at least 20 minutes. Serve warm or chilled.
