Pickled Chillies

Ingredients

750 gm chillies
1/3 cup sugar
2 tsp salt
1 tbs white peppercorns
1 1/4 cup cider vinegar
1 cup water

Method

  • Wash the chillies
  • Bring a large pot of water to the boil
  • Plunge approximately ten chiles into the boiling water for twenty seconds, remove and place into iced water to cool them (this process is called 'blanching and refreshing')
  • Repeat as required
  • Wipe chillies dry and to remove any fine outside skin
  • Pack into preserving jars
  • Bring all other ingredients to the boil, stirring until the sugar and salt have dissolved
  • Remove from the heat and place in chiller until cold
  • Pour over the chillies and seal
