Here's
one of a couple of great monkfish recipes which is a
bake - quite quick and you could cook it with the Vegetable
au Gratin <click here>
and save oven heat - a word of caution - the oven is
set higher for this and so your veg will probably only
need 15 minutes.
Use
the tomato and wine sauce from the first of my monkfish
recipes <click here> to
make this another gastronomic delight.
Ingredients
2.5
lb (1.25k) monkfish tail
2 garlic cloves - peeled and cut into slices
black pepper
olive oil
Method
- Heat
the oven to Gas Mark 7, 425°F or 220°C
- Make
incisions in the monkfish tail and insert the slices
of garlic.
- Brush
with oil and season with a few twists of black pepper.
- Place
the monkfish in an oiled tin and bake for about 30
minutes.
